  • Adobo
  • Fresh garlic
  • Onions
  • Green Onion (Scallion)
  • Thyme
  • Sea salt
  • Black pepper
  • Olive oil
  • Potatoes
  • Ketchup
  • Soy Sauce (optional)

Rice

  • Long grain rice
  • Salt
  • Water

Cabbage

  • Cabbage
  • Salsa
  • Black pepper
  • Sazón
  • Garlic powder
  • Salt
  • Onion
  • Green Onion (Scallion)
  • Fresh garlic
  • Soy sauce (optional)

and any other desired toppings or seasonings.

Cooking Curry Chicken and Rice

Curry Chicken

First, measure out your spices and place them to the side for later. Cut the chicken wings or thighs to the desired size. In a bowl, use the spices to season your chicken making sure to evenly coat all pieces. Drizzle the pot you plan to cook the chicken in with olive oil and add the fresh garlic. Next, add the chicken to the pot. In the bowl with the leftover seasoning, add the potatoes, mix this up and then add the potatoes to the pot with the chicken.

FUN FACT: The reason adding the potatoes to your curry chicken so early enhances your dish is because:

  1. Potatoes can take a long time to cook, chicken wings like chicken breast cooks quickly so adding the potatoes in early allows you to cook everything all at once.
  2. Putting the potatoes in from the beginning creates a thicker gravy. Sometimes instead of rice, curry chicken is often eaten with roti so the thickness of the gravy matters. This creates a better mixture to scoop with the roti rather than a runny curry chicken mixture that needs to soak into a starch such as rice.

Brown the chicken in the pot for 10-15 minutes so it develops some initial flavor. Remove the chicken from the pot and rest it to the side. Add more olive oil to the pot to deglaze it. Now, add green onion (scallion), fresh garlic and onion and cook this until the ingredients are translucent. Once this is achieved, add ketchup and additional curry powder, then stir the pot. The purpose of this is to create a paste that will become the foundation of the curry sauce. An additional reason to do this is to brown the actual curry.

Add two cups of boiling water to the mixture and bring to a rolling boil. Add the chicken back to the pot with the curry. Cook for 20-25 minutes, or until the chicken is fully cooked and no longer pink in the middle. 

Rice

While the chicken is cooking, prepare the white rice. You can cook your rice the traditional way in a pot, however we like to save ourselves some time by using a rice cooker. It’s easy to use and allows you to work on prepping other ingredients without having to pay attention to if your rice is burning or not. Once the rice is cooked, let it cool down to room temperature before portioning it out into separate containers for the week.

Cabbage

Finally, slice the cabbage into thin strips and set to the side. In large pan with olive oil saute the onions, green onion and fresh garlic. Add the cabbage and combine and cook for 10 minutes. Curry Chicken Wings Recipe: Meal Prep Idea

Ingredients

Curry Chicken

1lb Chicken Wings

1/4 Cup Lemon Juice (for washing the chicken)

2 TBSP Curry Powder

1/2 TSP Cumin

1/2 TSP Coriander

1/8 TSP Thyme

1/2 TSP Black Pepper

1 TSP Garlic Powder

1 TSP Adobo

1 TSP Sea Salt

2 TBSP Fresh Garlic Minced

1/2 Cup Onion Chopped

1/4 Cup Green Onion

2 TBSP Olive Oil

2 TBSP Ketchup

2 Cups Boiling Water

1-2 Potatoes

2 TBSP Soy Sauce

Cabbage

2 TBSP Salsa

1/4 TSP Black Pepper

1 TSP Adobo

1 packet Sazon

1 TSP Garlic Powder

1/2 TSP Sea Salt

1/4 cup Onion Chopped

1/4 cup Green Onion Chopped

1 Head Cabbage Chopped

2 TSP Fresh Garlic Minced

2 TBSP Olive Oil 


Instructions

Curry Chicken 

  1. Clean chicken- remove any extra fat, skin, or feathers. 
  2. Wash chicken- Pour lemon juice over chicken, wash in cold water, drain well and dry with paper towel
  3. Season chicken with one TBSP of the curry powder and the rest of the spices (cumin, coriander, thyme, black pepper, garlic powder, adobo, and sea salt).
  4. Add olive oil and fresh garlic to the pot and then add the chicken and saute/ brown. After 5 minutes add the potatoes and brown for 10-15 minutes. 
  5. Remove the chicken and potatoes from the pot and rest to the side. 
  6. In the same pot add additional oil and then the chopped onion, green onion, and fresh garlic. Saute till translucent. 
  7.  Add the ketchup, soy sauce, and remaining curry powder to the pot. Saute for a few minutes. Then add two cups of boiling water. 
  8. Allow the mixture to come to a rolling boil and then add back the chicken and potatoes. 
  9. Cook for 20 to 25 minutes or until the chicken wings are fully cooked. 

 

Cabbage 

  1. Add olive oil, fresh minced garlic, the chopped onion, the chopped green onion and the salsa to the pot. 
  2. Saute until translucent. 
  3. Add the chopped cabbage and combine. 
  4. Cover and cook for 10-15 minutes. 
  5. Add the black pepper, adobo, sazon, garlic powder, and sea salt. 
  6. Cook for another 10 minutes or  until the cabbage is translucent and slightly crunchy.
