Curry Chicken Wings Recipe: Meal Prep Idea

Ingredients

Curry Chicken

1lb Chicken Wings

1/4 Cup Lemon Juice (for washing the chicken)

2 TBSP Curry Powder

1/2 TSP Cumin

1/2 TSP Coriander

1/8 TSP Thyme

1/2 TSP Black Pepper

1 TSP Garlic Powder

1 TSP Adobo

1 TSP Sea Salt

2 TBSP Fresh Garlic Minced

1/2 Cup Onion Chopped

1/4 Cup Green Onion

2 TBSP Olive Oil

2 TBSP Ketchup

2 Cups Boiling Water

1-2 Potatoes

2 TBSP Soy Sauce

Cabbage

2 TBSP Salsa

1/4 TSP Black Pepper

1 TSP Adobo

1 packet Sazon

1 TSP Garlic Powder

1/2 TSP Sea Salt

1/4 cup Onion Chopped

1/4 cup Green Onion Chopped

1 Head Cabbage Chopped

2 TSP Fresh Garlic Minced

2 TBSP Olive Oil 


Instructions

Curry Chicken 

  1. Clean chicken- remove any extra fat, skin, or feathers. 
  2. Wash chicken- Pour lemon juice over chicken, wash in cold water, drain well and dry with paper towel
  3. Season chicken with one TBSP of the curry powder and the rest of the spices (cumin, coriander, thyme, black pepper, garlic powder, adobo, and sea salt).
  4. Add olive oil and fresh garlic to the pot and then add the chicken and saute/ brown. After 5 minutes add the potatoes and brown for 10-15 minutes. 
  5. Remove the chicken and potatoes from the pot and rest to the side. 
  6. In the same pot add additional oil and then the chopped onion, green onion, and fresh garlic. Saute till translucent. 
  7.  Add the ketchup, soy sauce, and remaining curry powder to the pot. Saute for a few minutes. Then add two cups of boiling water. 
  8. Allow the mixture to come to a rolling boil and then add back the chicken and potatoes. 
  9. Cook for 20 to 25 minutes or until the chicken wings are fully cooked. 

 

Cabbage 

  1. Add olive oil, fresh minced garlic, the chopped onion, the chopped green onion and the salsa to the pot. 
  2. Saute until translucent. 
  3. Add the chopped cabbage and combine. 
  4. Cover and cook for 10-15 minutes. 
  5. Add the black pepper, adobo, sazon, garlic powder, and sea salt. 
  6. Cook for another 10 minutes or  until the cabbage is translucent and slightly crunchy.
